Southern Comfort: Cajun Catfish Stew

A rich, spicy, comforting Cajun Catfish Stew

Ingredients
  

  • 1 to 3 pounds of catfish fillets
  • 3 slices of bacon
  • A 28 ounce can of crushed tomatoes
  • 1 cup onion chopped
  • 2 stalks celery chopped
  • 1/2 cup green bell pepper chopped
  • 2 cups potatoes peeled and chopped
  • 1/2 bag frozen okra
  • 2 T Worcestershire sauce
  • 1/4 cup ketchup
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 2 bay leaves
  • 1/8 tsp liquid smoke
  • Cajun shake seasoning
  • Garlic salt

Method
 

  1. Cut the catfish fillets into pieces and sprinkle with Cajun seasoning and garlic salt
  2. Cut three pieces of bacon and cook in a pot
  3. Add the celery, onion, and peppers and cook them in the bacon drippings, 2 min
  4. Add one cup of water
  5. Add the tomatoes
  6. Add the potatoes
  7. Add Worcestershire, bay leaves, salt, pepper, and thyme, liquid smoke
  8. Cook 20 min
  9. Add fish and okra
  10. Cook 20-30 min
  11. Serve with cornbread
