Paw Paw Pie

This custard pie uses wild paw paws that taste like a cross between a banana and a mango

Ingredients
  

  • 1 cup paw paw puree
  • 3/4 cup white sugar
  • 1/4 cup cornstarch
  • 3 egg yolks beaten
  • 1 lime juiced and zested
  • 1 1/2 cups milk
  • 1/2 cup heavy whipping cream
  • 1 9 inch graham cracker pie crust
  • chopped hazelnuts or almonds (optional for garnish)
  • whipped cream (optional for garnish)

Method
 

  1. Combine lime juice and half of the zest with the paw paw puree.
  2. Mix together the sugar and cornstarch.
  3. Mix together the milk and cream.
  4. Whisk together the sugar, cornstarch, and egg yolks.
  5. Combine the sugar, cornstarch, egg yolks, milk and cream in a pot.
  6. Whisk in the paw paw puree. Heat the mixture over medium or medium-low heat.
  7. Heat for about 15 minutes until the mixture thickens.
  8. Cool mixture for about 15 minutes.
  9. Pour mixture into pie crust. Sprinkle nuts and remaining lime zest on top.
  10. Cool completely in the refrigerator for at least an hour.
  11. Optional: top with whipped cream.
