Wild Pork Carnitas

A harvested wild pig turned into delicious pork carnitas

Ingredients
  

  • 1 pork butt
  • 1/2 bottle Moho marinade
  • 3/4 cup balsamic vinegar
  • 1/2 cup olive oil oil
  • 6 cloves of garlic
  • 1 small onion
  • 2 green onions
  • Juice from 3 oranges
  • Juice from 6 limes
  • 2 teaspoons pepper
  • 4 bay leaves
  • 1 teaspoon smoked paprika
  • 1 T cumin
  • 1 tsp coriander
  • 6 tablespoon tablespoons salt

Method
 

  1. Chop the garlic and onion
  2. Place them in a medium sized bowl
  3. Add the juice from the oranges and limes
  4. Add the seasonings: pepper, bay leaves, smoked paprika, cumin, coriander, and salt
  5. Mix well
  6. Separate out 1 1/2 cups marinade into a jar
  7. Marinate the pork in the remaining mixture overnight in the fridge
  8. Prepare the smoker by soaking the wood chips and heating the smoker to 250°
  9. Cook the meat to 165°
  10. Place the meat in a foil pan and add 1 cup reserve marinade cover with foil and place it back in the smoker
  11. Cook the meat until it reaches 203°
  12. Shred the meat
  13. Add remaining 1/2 cups marinade into a cast iron skillet
  14. Place the shredded meat in the skillet
  15. Cook it to crispy golden brown
  16. Build your tacos and pig out
