Alligator Jambalaya

Gator, shrimp, sausage, bacon, rice in a dutch oven over a campfire.

Ingredients
  

  • 1 lb bacon
  • 2 lbs alligator tail meat cubed
  • 1 lb andouille sausage sliced
  • 1 lb shrimp (raw, shelled, tail off)
  • 2 lbs long-grain white rice
  • 1/2 cup green onion (sliced) diced
  • 1/2 cup celery (sliced)
  • 1/2 cup green bell pepper (chopped)
  • 2 containers chicken stock

  • fresh parsley (optional for garnish)

  • Dutch oven

Method
 

  1. In a Dutch oven over campfire coals, brown bacon.
  2. Remove bacon, leave grease in the Dutch oven.
  3. Brown sausage in the grease. Remove.
  4. Brown alligator in the grease. Remove.
  5. Add bell pepper and celery — cook until soft.
  6. Add alligator and sausage back in.
  7. Sprinkle with Slap Ya Mama seasoning.
  8. Add chicken stock.
  9. Add rice and green onion.
  10. Bring to a boil, cover, and simmer 20–25 minutes until rice absorbs liquid.
  11. Add shrimp and sprinkle with more Slap Ya Mama seasoning.
  12. Fluff and serve hot.
  13. Add bacon back in.
  14. Top with geen onion, and top with fresh parsley.
