Sweet Potato Souffle

Ingredients
  

  • 3 cups mashed sweet potatoes about 3 large
  • 1/2 cup butter melted
  • 1/2 cup sugar
  • 2 eggs beaten
  • 1 tsp vanilla extract
  • 1/3 cup milk
  • Topping:
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup butter melted
  • 1 cup chopped pecans

Equipment

  • 9x13 baking dish
  • hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F.
  2. Mix sweet potatoes, butter, sugar, eggs, vanilla, and milk until smooth.
  3. Pour into a greased 9x13 baking dish.
  4. Mix topping ingredients and sprinkle over the sweet potato mixture.
  5. Bake 30 minutes until topping is golden and set.
